My first meal

blogging that is!

I am really excited to get back to blogging but I feel like I have forgotten EVERYTHING about it. I know it will just take time getting use to blogging and especially taking pictures again.

So, I decided tonight I wanted to make something yummy and something I have never made before. Ever since Catlin @Healthy Tipping Point made her “Pumped-Up Corn Casserole” I have been eying it ever since. I made it tonight with a few changes: I used chicken instead of tofu, more broccoli and in the last 3 minutes I added 2% shredded cheese to the top.

It was soooo good! I was kinda worried cause I HATE broccoli and thought the broc would ruin the flavor but I could not even tell it was in there. I added it for some veggie power.

Man, this was good. The hub kept saying how good it was and how he loved corn and casseroles.

I was going to make a salad to go along with it but I ate a few too many chips and hummus before dinner. Oops!

Well, I am off to give Rascal Flatts a bath!
