Hi! My name is Lex (nickname that is) and I’m addicted to sugar!
We are one day closer to Friday! :) I think it’s sad that each day/every week I count down to Friday. Since I missed work yesterday this was actually my Monday and it wasn’t a bad day. Yay!
I started my morning with a NEW BAR
Balance Mocha Chip
When I bought it several weeks ago it was a hot hot day and forgot about it and left it in my car. Ewww!
A little melted but not bad. The mocha flavor was very faint. I wished it was just a tad bit stronger. Maybe it had something to do with melting and then reforming?! I love the flavor of coffee stuff i.e. candy, ice cream, bars, cakes, etc, but hate the real thing. Oh weird is that?
My tum tum starting making noises about 10:30 so I gave it some food to shut up ;)
Grapies!!! These grapes were on their last leg so I am glad they got eaten today. I am trying really hard not to waste food.
I had to run a few errands on lunch so I actually worked through my lunch. I like doing this because it takes me longer to eat my lunch but I hate when you take a bite and the phone rings. Yikes!
For lunch I had a favorite that I don’t eat very often. Well, because I always forget.

Then a co-worker handed over her chips and salsa from a Mexican place. How could I say no?
No, I didn’t eat all of these. I ate about 6 chips dipped in salsa and buried the rest in the trash. :)
I ran to Target on my lunch to pick up a few things. Big Mistake!

It was a candy/sweet load this afternoon. I always reminding myself it could have been worse. ;)
Now to the good stuff… dinner! So, I have been thinking a lot lately about how I don’t ever use recipes or “broaden my horizons”. I am the type person who knows what’s works and is afraid to step out of the box but I wind up having boring boring meals. So, I have been looking up a lot of recipes, printing them off and then go through them a few days later to see if I would really try them or if they just sounded good at that particular time. I did that for this week, wrote out a menu and hit up Publix tonight after work to get everything I needed.
Tonight’s dinner was a Publix Apron’s Meal called Tortellini Soup. You can find the recipe on Publix’s website HERE. I doubled the recipe so I could use all of the ingredients I bought (like the sausage) plus I would have leftovers for lunches. Now I will tell you I am not a pork fan and probably haven’t eaten it in a year or so. I thought about subbing turkey for the sausage but at the last minute decided just to do the recipe as is was.
This soup was AWE-SOME!!!! I was surprised. I would change two things though. 1) Buy Turkey instead of pork and 2) use mild or medium sausage instead of hot because I was on fire!!!
I really like some of the Apron’s Meals. A lot of them I can actually see myself making (like this one). I will say this though, I think they are off on the prepare and cook times. Granted I did double the recipe so that would take longer to heat up, boil and cook but this specific recipe said it would take 35 minutes and this took me almost and hour and a half from start to finish. Maybe that’s right. Maybe you double the time as well. Not sure, but it seemed too long. The taste made up for it though.
I know what I’m having for lunch tomorrow! Night!
