I can not believe 8 years ago was 9/11. I still remember that day like it was yesterday. I remembered where I was when I found out something was going on. I didn’t believe it. Everything happened so fast and I remember the whole country was shut down and everyone was trying to figure out what was going on. I remember they played the tapes over and over of the planes hitting the Twin Towers. When I was in 8th grade we took a school trip to New York. That was the only time I have been there. It is an amazing city and I really want to go back soon. My heart goes out to all the victims and their families. I am also thankful for the men and women who fight for this county, especially my brother.
On to some great eats…
I tried a new Balance bar
Cookie dough… it was not nearly as good as the one I had yesterday. This one kinda had a mineral/vitamin taste that unfortunately a lot of bars have.
It had chocolate chips just like the other bar so I thought they would be similar :( I don't think the Balance bars keep me satisfied any longer than Luna Bars and I love a lot of the Luna Bars.
Lunch was AMAZING

For desert I had a kiss
perfect ending to a perfect lunch :)
I had a pretty busy afternoon and before I knew it, it was time to start unwinding and packing up my stuff to get ready to leave work. Little did I know, lots still had to be done and stayed 30 minutes after work to finish up some things. By the time I got home and had a chance to sit down my hunger started and it me full blown. The hub wasn’t hungry yet but I went ahead and made my dinner. While I was cooking I started with the shakes, as in I need food NOW shakes. I hate those.
What did I make?
corn on the cob leftover from last night
sandwich with leftover chick chick from last night, American cheese and hot sauce
salad with baby spinach, mixed baby greens, toasted almond slivers with balsamic vinaigrette
watermelon and grapes
Can you tell how hungry I was? I was just making anything and everything.
So what did I eat?
1/2 the sandwich, 1/2 the corn, all the salad and grapes and 1/3 of the melon.
and then…
I finally got a cupcake! It was well worth the wait and it was sooo good. I think the icing was better today. It had time to soak and sink in all the flavors. I actually enjoyed cooking the cuppy cakes and am looking forward to making more or something else new.
It’s officially the weekend!!!
