Sketti

Good Evening on this lovely evening! Ha Ha!

I didn’t wind up going to work today. Long story short,  the hub was sick and I got very little sleep last night. Tired=crankiness

Last night before bed I had a handful of raw cashews (my fav)

and 1 1/2 handfuls of chips

I woke up this morning ate this bar and then headed back to bed.

When I woke back up it was pretty much lunch time but I am not the person to eat as soon as I wake up so I played on the internet a bit before I made lunch

I had 3/4 of this sandwich which had turkey, cheese, mayo, turkey pepp and hot sauce on it melted in the George Foreman

I have been very lazy today. Just laying on the couch resting and playing on the net. Boring!

I decided to try Spaghetti Squash for dinner tonight because 1) That was the only thing I had that I could make. I really need to go to the store. and 2) I have been dying to try it.

This is what I did…

I cut the squash long ways in half and took each half like so

and scraped out all the insides ( It is a lot like a pumpkin and smelled like one too) like so

then I put the cut sides down like so

and baked it at 350* for 40 minutes

I took it out and turned each side over to start cooling down

I should have waited longer before I started scraping but I was dying to see what the insides were all about. While the squash was cooking and I was scraping I heated up some spaghetti sauce.

It was so fun and neat but very hot! I have a few “steam” burns. :(

I think this squash was on the smaller side that I have seen but I still managed to get quite a bit out

I put a little butter in them and stirred it all up. I put some squash in a bowl and added the spaghetti sauce.

with a little Parm on top (it was kind of water-y)

(I ate almost all of it—I left maybe 3 or 4 bites)

with a salad with baby spinach, baby greens, toasted almonds and balsamic vinaigrette

and half of the last roll with a little butter

I will be buying these rolls again, let’s just hope I go back to the famer’s market soon and they have them :)

SPAGHETTI SQUASH VERDICT: I thought I was going to HATE it. It wasn’t bad. I think it would have been a lot better if I had different sauce. I used a new sauce and I think it tasted funny and threw this whole meal off. The hub practically gagged trying to eat it. He said he didn’t like the texture of the “noodles” and I had to beg him to stop eating it and wound up making him something else. I thought it was edible though. Would I try it again? Probably. I would def use different sauce. I didn’t find the squash that filling at all so if I made it again I would need to “beef” it up some.

Hence why I ate two slices of turkey bacon cooked in the microwave. Yummmmm!

Desert:

I called dibs on the last cupcake :( cause the hub has had like twice more than me (not really but he has had more). So, I knew if I didn’t eat it tonight it might not be there tomorrow. As I went in the kitchen I felt guilty I would eat the last cupcake in front of the hub so I split it in half and gave half to him. I knew I didn’t the whole thing and I could happily make more sometime. I’m such a nice wife :)

with a side of Edy’s Take the Cake Ice cream. See, I wouldn’t have had the ice cream if I had the whole cupcake… ok maybe I would.

I am off to watch the finals of America’s Got Talent!!! and SOOOO excited about Biggest Loser tomorrow! Whoo Hooo!
