I am so glad tomorrow is finally Friday. Even though I had Monday off from work, I still made up for it the rest of the week. But, I would rather have a day off and be more busy than have a 5 day work week. I wish the world worked on 4-10 hour shifts.
There is a new farmers market that opened literally a block (maybe two) from my mother-in-law’s house, so I think the hub and I are going to go check it out. I think this Saturday is the 5th or 6th Saturday that it’s been running. My MIL went two weeks ago and said it was small, but really nice and they sold all kinds of things, not just produce. I am looking forward to going.
Breakfast today was a newbie but a goodie!!!
Balance Gold chocolate mint cookie crunch
I thought it would be green! It has little crispies on the top and chocolate chips inside. Hmmmm….
This bar was 2 thumbs up and I will must buy it again.
An attorney brought donuts in and I was a good girl and ate the breakfast I packed (there was even one with sprinkles -my fav!) UNTIL the bar wore off and I gave in.
:) I thought long and hard on this decision. I knew I wouldn’t allow myself to have any type of sweets the rest of the day. I thought long and hard and decided it was WAY worth it.
Hello Baby Rascal!!!
I used my donut hole to look through. Ha Ha! Man, what a great decision. This bad boy was great. No regrets here!
I had this big nana as a snack that took me 30 minutes to eat.
I was really busy at work today and tried to tie up so loose ends before I took my lunch break. When I finally decided to go to lunch I was starving.
Leftovers
salad with toasted almonds and raspberry vinaigrette
This was the last of the corn casserole so I will have to make another batch soon.
While cooking dinner I did something I have never ever done before… just wait!!!
Dinner was quick and easy. Thank goodness cause dinner did not have my full attention.
I made chicken with crushed red pepper flakes and black pepper, green beans, and corn on the cob.
I got the corn on the cob at Publix for .25 per ear. What a deal!
So, what was I doing while cooking dinner? That I have never ever done before? MADE HOMEMADE CUPCAKES FROM SCRATCH!!!!
As silly as it sounds I have always made cake and cupcakes from a box and have made homemade cookies once when I was like 10. I was a little overwhelmed and intimidated at first (lots of dirtying of dishes, lots of steps to follow) but once I got them in the oven I was able to clean up and calmed down a bit.
So what did I make?
I got the recipe from Megan at MegaNerd Runs
The icing was homemade butter cream with crushed Oreo. I actually used the Back to Nature “Oreos” instead of real Oreos but I taste tested them and they tasted the same.
These were really fun to make and the end result was worth a dirty kitchen for sure! I have not tried a cupcake for myself (remember I ate a donut this morning and said I wouldn’t eat anymore sweets?) but I gave the hub one. He is not a chocolate fan, really neither am I, but he agreed to try one. He really liked it! He said it wasn’t too chocolaty.
I did do some licking of spoons, knives, blenders beaters, and bowls.
I got a bit of a tummy ache from too much sugar from the icing so I decided to eat a little hummus and pita chips to soak all that sugar up.
Worked like a charm!!!
I’m sad I didn’t try and cupcake but I did enjoy the icing I managed to lick off spoons and knives, but the wait will make it soooo much better!!!
Tomorrow is FRIDAY!!!
Night!
